SINGAPORE — As Singapore continues its celebrations ahead of its 60th anniversary, one local chef is offering a unique culinary tribute to the nation’s rich cultural tapestry. Antonio Tay, the chef-owner of Oasis Hideout, is marking the milestone with the ‘Harmony Platter’, a special set menu that seeks to encapsulate the essence of Singapore’s multicultural identity on a single plate.

The platter is the result of Chef Antonio’s personal reflection on Singapore’s journey. Drawing on his own background as a second-generation hawker, he wanted to create a meal that would remind Singaporeans of the rich blend of cultures that defines their home. “Being Singaporean, we often take for granted the rich tapestry of food that we have from so many cultures,” he explained. “Over 60 years, we have learnt to break bread together… It was this harmony that I wanted to highlight, which inspired me to create the ‘Harmony Platter’.”
The dish is a tribute to the four main cultures that form the foundation of Singapore’s society, with each component thoughtfully selected to represent a piece of the nation’s culinary soul. Chinese roots are celebrated with classics like Sweet and Sour Fish and Sautéed Cabbage Chinese-Style, while a playful twist is added with Har Cheong Chicken Popraage.
The platter also features a nod to Malay cuisine with Merah Goreng Ayam and Beef Rendang, alongside Satay Skewers that fuse Western and Asian styles. Indian culture is represented by a choice of Masala Curry Barramundi or Masala Curry Chicken. In a symbolic nod to the rest of the cultures that contribute to the nation’s unique population, the menu includes a Universal Omelette—a simple yet universally loved dish. All items are served with Nasi Lemak Pandan, a fragrant rice dish that is a staple of Singaporean food culture.

Designed to generously feed a family of four, the Harmony Platter is available for a promotional price of S$60 nett (usual price S$89). The offer, which began on 16 July, will run until 30 September, providing a fitting reflection of Oasis Hideout’s own identity as a restaurant that blends Western and Asian flavours. Through this special offering, Chef Tay hopes to serve not just a meal, but a comforting and nostalgic reminder of the harmony that has seasoned Singapore’s journey.
